Roasted Spring Garlic

Notes from the Chef:

Green garlic tastes great and can be used in all its phases of development. In late spring, as green garlic starts to mature, the bulb of the clove begins to form. The skin will still be moist and tender, and this is the perfect time to prepare it roasted. It is delicious spread on toasted/grilled bread! Afterwards, any extra oil can be stored and used in a salad dressing or to enhance other dishes with the delicious flavor of spring garlic…Enjoy!
