Crunch Salad with Peanut Dressing and Tamari Cashews

A Note from the Chef:

This is one of those "star of the show" salads, with its brightly colored ingredients enhanced by the tangy peanut and lime dressing. You can really use any veggies you may have, but the partnership of thinly sliced napa cabbage and shredded carrot is a great place to start and will remain crispy throughout the party. We like topping it all off with chopped tamari roasted cashews — so good!
