Kale, Strawberry, and Fennel Salad with Lemon Vinaigrette

A Note from the Chef:

This salad is delicious year-round. If it isn’t strawberry season, or you don't have them on hand, you can substitute dried cranberries, and it will be equally tasty. We usually make more of the vinaigrette than needed for just this salad because it is nice to have on hand for times when we are too tired to whip up a new dressing. It lasts a long time in the fridge, so make a little extra if you feel like it!
