Melon, Tomato, Basil, and Feta Salad with Pickled Red Onions

A Note from the Chef:

This is absolutely hands down our favorite summer salad, and it’s so easy to make. It really can become a meal in itself when served with slices of grilled olive bread. Any kind of melon can be used, but we love crenshaw, cantaloupe, red and/or yellow seedless watermelon, or a combination of them all! It is so beautiful when combined with the bold flavors and colors of heirloom tomatoes, the sweet Sungolds, and cherry tomatoes. The fresh basil and pickled onions lend a flavor contrast that keeps everyone coming back for more!
